Alhamdulllah,ummi berjaya menyiapkan cupcake untuk kawan amni auni kat sekolah,walaupun jarak birthday dia orang dah lama,dari hari ke hari ada saje keja yg nak di buat.mula2 plan nak buat kek,tp fikirkan dia orang pre school kesian pulak kat cikgu nak uruskan kek dgn budak2 kecik ni. so ummi buat cupcake siap masukkan dlm bekas,senang cikgu2 nak bahgikan kat budak2.cupcake untuk kawan2 dia orang ummi buatkan chocolate moist cupcake.tp untuk cikgu2 ummi buatkan red valvet cupcake.

cupcake untuk assingment



Balik dari penang ummi kelam kabut turun dapur tengok ada tak bahan2 untuk buat cupcake.check punya check cukuplah bahan2 untuk buat simple coklat moist cupcake n buttercream,cupcake ni ummi buat untuk adik ummi yg katanya untuk assingment,moga adik belajar rajin2 n  cemerlang bukan untuk dunia je tapi seiring dengan akhirat ya dik. nanti next entry ummi masukkan resepi cupcake ni ya.

sticky date muffins









Mufin ni ummi buatkan masa open house kat rumah mak tok hari tu ,serve dengan ice cream,resepi ni ambik dalam the star.

70g pitted dried dates, roughly chopped
¼ tsp bicarbonate of soda
2 tbsp hot water 70g butter, softened
50g soft brown sugar
2 eggs
65g self-raising flour

Preheat oven to 180°C and lightly grease 6 muffin cups.
Combine dates and bicarbonate of soda with water in a small bowl for 4-5 minutes then drain. Place butter and sugar in a mixing bowl. Beat until light and fluffy then add eggs, one at a time, beating well after each addition. Sift in flour and stir in dates.
Bake in preheated oven for about 15-20 minute

2 1/2 cups sifted cake flour
1 teaspoon baking powder
1 teaspoon salt
2 tablespoons unsweetened cocoa powder
2 oz. red food coloring (two bottles) or 4 oz beet juice (if you use unprocessed light cocoa you can leave out the food dyes and you'll get a warm red/brown color)
1/2 cup unsalted butter, softened
1 1/2 cups sugar
2 eggs, at room temperature
1 teaspoon vanilla extract
1 cup buttermilk, at room temperature
1 teaspoon white vinegar
1 teaspoon baking soda
1. Preheat oven to 350 degrees. Line two 12-cup muffin tins or silicone pans with cupcake liners.
2. Sift together the cake flour, baking powder, and salt into a medium bowl and set aside. In a smaller bowl, mix food coloring and cocoa powder to form a thin paste without lumps and set aside.
3. In a large bowl, using a hand mixer or stand mixer, beat butter and sugar together until light and fluffy, about three minutes. Beat in eggs, one at a time, then beat in vanilla and the red cocoa paste, scraping down the bowl with a spatula as you go. Add one third of the flour mixture to the butter mixture, beat well, then beat in half of the buttermilk. Beat in another third of flour mixture, then second half of buttermilk. End with the last third of the flour mixture, beat until well combined, making sure to scrape down the bowl with a spatula.
4. In a small bowl, mix vinegar and baking soda. Be careful as it will fizz so don't do it in a shallow bowl. Add vinegar mixture to the cake batter and stir well to combine. Fill cupcake cups with cake batter until they are a little under 3/4 full. I ended up with 20 cupcakes. Place muffin tins in your preheated oven. Bake for approximately 20, rotating pans halfway through. The cupcakes are done when you are able to pat the tops and the cake springs back up. If it sinks down they are not yet complete. Or you can insert a toothpick into the center of a cupcake in the center of the tin and if it comes out clean they are done!
5. Cool the cupcakes in their tins on a wire rack for 10 minutes then remove and allow to cool completely before frosting.
6. Enjoy!

Ingredients
Makes 2 cups
  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 1 (8-ounce) cream cheese, room temperature
  • 1 cup confectioners' sugar, sifted
  • 1 teaspoon pure vanilla extract
  • 1/4 cup finely chopped walnuts/optional

Directions

  1. Place butter in bowl of an electric mixer fitted with the paddle attachment, and beat on medium-high speed until light and fluffy, about 2 minutes. Add cream cheese, and beat until well combined and fluffy, about 2 minutes more. Add sugar and vanilla, and beat until combined, about 2 minutes. Fold in walnuts.

CHOCOLATE CUPCAKES

CHOCOLATE CUPCAKES

Ingredients :

220g cake flour
30g cocoa powder
1 teaspoon baking powder
125g butter
125g castor sugar
2 large eggs
1 teaspoon vanilla essence
130ml chocolate flavoured milk

Method :

1. Sift flour, cocoa powder and baking powder. Set aside.
2. Cream butter and sugar till fluffy. Add eggs one at a time.
3. Add vanilla essence.
4. Add flour, alternately with chocolate flavoured milk, starting and ending with flour.
5. Spoon the batter into the prepared muffin pan lined with papercups.
6. Bake in a preheated oven at 175 C for 22-25 minutes.

vanilla cupcake with buttercream and fondant

KEK CAWAN
(Menghasilkan anggaran 25 biji kek cawan.)

Bahan-bahannya
250 gm mentega
230 gm gula kastor
2 camca teh Quick 75
4 biji telur Gred A
270 gm tepung serbaguna } diayak
1 camca teh serbuk penaik }
60 gm susu pekat
2 camca besar susu segar/cair
1 camca teh vanila

Hiasan
Aising mentega susu biasa
Aising mentega oren/ungu
Mawar kecil (merah muda)
Parutan coklat

Cara membuatnya
1. Putar mentega, gula dan Quick 75 hingga gebu.
2. Masukkan sebiji demi sebiji telur, pukul sebati setiap kali.
3. Campurkan bahan ayak, kacau rata.
4. Bubuh susu pekat, susu cair dan vanila.
5. Bila sebati, timbang sebanyak 44 gm untuk setiap cawan kek (saiz sederhana).
6. Bakar pada 190 C selama 20-25 minit atau hingga masak.
7. Biar kek sejuk sebelum dihias ikut suka.


AISING MENTEGA SUSU
(cukup untuk menghias kek cawan di atas)

Bahan-bahannya
125 gm mentega (bukan mentega tulen/pure)
125 gm krimwell
100 gm susu pekat
20 gm gula aising, diayak
1/2 camca teh vanila
Pewarna oren, ungu, merah dll

Untuk aising coklat (dipukul sekali dalam langkah 1)
15 gm serbuk koko, diayak
1 camca besar susu cair

Cara membuatnya
1. Pukul semua bahan dengan pemutar elektrik.
2. Pastikan berhenti sekali-sekali dan kacau dengan spatula supaya semuanya sebati.
3. Bila kembang, pucat dan gebu, bahagikan mengikut warna yang dikehendaki.
4. Sapukan kek dengan aising kemudian hiaskan mengikut citarasa masing-masing.
